Recipe: Citrus Cashew Dressing

This plant-based dressing is super simple. All you need is 5 ingredients, a high-speed blender, and about 10 minutes.
- 2 cups of cashews
- 1 ½ cups of Water (adjust accordingly)
- 2 cloves of garlic
- 1 lemon, juiced
- Salt, tt
Soak your cashews overnight. Drain cashews and toss into your high-speed blender. Pour water, your two cloves of garlic, lemon juice and salt into your blender. Start blending on low and work your way up to a high speed. You may need more or less water. Consistency should be runny. Turn blender off, pour into a cute jar or serving container and you’re done! This dressing can be stored for up to five days.
